What you need

  1. Pasta With Red Sauce, Gather Your Ingredients: step 1, image 1 of 1
    • Gather all ingredients.

    • Begin preheating a large dutch oven or pot.

    • Mince your onion.

    • Prep your garlic for the press. Remove any green stems.

    • Prepare your protein as you like.

  3. Pasta With Red Sauce, Get your hands dirty: step 3, image 1 of 2 Pasta With Red Sauce, Get your hands dirty: step 3, image 2 of 2
    • Empty the tomatoes into a large mixing bowl.

    • Add the spices, anchovies, and vodka.

    • Eyeball the amounts.

    • Discard the anchovy oil.

    • Mix and crush everything thoroughly with your hands until you have a nice sauce.

  4. Pasta With Red Sauce, Brown the meat: step 4, image 1 of 2 Pasta With Red Sauce, Brown the meat: step 4, image 2 of 2
    • If you aren't using meat, use some butter and high-quality EVOO as a fat substitute.

    • Brown your choice of meat. I used pork belly this time.

    • Remove and reserve once browned.

    • Remove and reserve any excess grease for other culinary uses.

  5. Pasta With Red Sauce, Soften the onion: step 5, image 1 of 1
    • Add the minced onion, stirring intermittently.

    • The onion will release enough moisture to de-glaze the pan.

    • Use a garlic press to add your desired amount of garlic. Stir until someone in the next room says "that smells good" (about 1-2 minutes).

    • Add the 'maters!

    • Reduce heat to medium-low once they start to simmer.

    • Add dried mushrooms if you want. These are dried boletus, AKA Porcini mushrooms.

    • Zest a lemon in there. If you're a real lemon freak like I am, squeeze the juice in there too.

    • Simmer and stir for at least a half hour.

    • Add the reserved protein.

  7. Pasta With Red Sauce, Food, meet bowl: step 7, image 1 of 3 Pasta With Red Sauce, Food, meet bowl: step 7, image 2 of 3 Pasta With Red Sauce, Food, meet bowl: step 7, image 3 of 3
    • Make some pasta.

    • Plate and stir in a generous amount of Parmesan.

    • Use a microplaner and a good parmigiano reggiano for the best flavor.

    • Garnish with basil or parsley.
