It’s not an issue specific to OWC SSDs. There is a firmware update with the latest macOS 10.14 Mojave (or newer) security update that fixes this. So if looking to install a 3rd party SSD it’s best to ensure you have this firmware update installed first. If the firmware is recent enough you may be able to update the firmware with the 3rd party SSD installed.

There is a firmware update in the latest macOS 10.14 Mojave (or newer) Security Update with an updated NVMe driver that fixes hibernation issues. If your Boot ROM doesn’t update with the 3rd party one installed you can put the stock one back in do the firmware update and then put the 3rd party one back in.

You should put the latest security update for macOS 10.14 Mojave or later on before doing the SSD upgrade as that has further compatibility fixes in a firmware update that wasn’t available for High Sierra. After doing this update the fixes will remain if you reinstall High Sierra.

You would need to find another Apple OEM SSD, say a 128GB one. I would update to the latest security update for macOS 10.14 Mojave or later as that includes an EFI (firmware) update that resolves hibernation issues. Once you have that EFI update you can reinstall High Sierra if you wish.

You are probably booted into the Mac OS that came with your Mac. Try Option-Command-R which should boot into Internet Recovery of the latest compatible version.

Catalina (10.15) is newer than High Sierra (10.13) so if Catalina was working with your old drive before it failed you should be good to go. If you were running an older Mac OS you may need to borrow or buy a second handle Apple OEM drive even a 128GB one would do to get the Boot ROM updated. You should install the latest Mojave/Catalina Security Update or Big Sur update to get a Boot ROM fix that fixes hibernation issues with 3rd party SSDs.

If you are using Internet Recovery make sure that you are using at least High Sierra. Older Mac OS than High Sierra won’t see the SSD.

If you hold down Option-Command-R you should be presented with Internet Recovery for the latest compatible version of Mac OS for your Mac provided that you installed 10.12.4 or later at some point in the past.

In the latest Mojave/Catalina Security Updates and in the latest Big Sur update there is an update to the Boot ROM including an update to the NVMe driver that solves that issue. It’s recommended to update to that.
